For one night only, join us for an exclusive pop-up with Wayan at Ajax Tavern on Friday, March 17. The Manhattan-based restaurant by Chef Cédric Vongerichten offers Indonesian cuisine with a modern French flair. Wayan is Cédric’s first solo venture, after partnering with his father, Chef Jean-Georges Vongerichten, on eateries in New York and Jakarta. The name originates from Bali, where each person receives one of four names based on birth order. Wayan is the name given to the first-born child—or, in this case, to the chef’s first independent culinary effort.
Enjoy a four-course, family-style dinner at $125++ per person with an optional wine pairing for $105++. Reservations are available between 6 - 10 pm.

First Course
- Yellowtail tartare with acar, black rice, sambal hijau avocado gado gado, cucumber, and peanut relish
Second Course
- Vegetable spring rolls with green chili emulsion, mint colorado lamb satay, chili kecap manis, and pickled peppers
Third Course
- Lobster noodles with black pepper butter, Thai basil pork ribs, soy tamarind glaze, sesame seeds, Urfa corn fritters, and yellow rice
Fourth Course
- Pandan custard with fresh passion fruit seeds, banana sundae, banana cake, and ube ice cream
